Where Palak Paneer is silky and gentle, Kadhai Paneer is its bolder, brassier cousin. The dish is built around a freshly ground masala — coriander seeds, dried red chillies, fennel, and black pepper — toasted whole and crushed by hand the same day they're used.
We sauté tomatoes and onions until they break down, then add bell peppers (capsicum) cut into wide strips so they retain crunch. Hand-pressed paneer cubes go in last, along with the kadhai masala, ginger juliennes, and a final flourish of kasuri methi. Cooking in a hot iron kadhai is what creates that smoky char on the edges of the paneer — the dish's signature touch.
