Palak Paneer's magic lies in its simplicity, but only if you respect the technique. Our spinach is blanched briefly to lock in that bright emerald colour (no overcooked grey-green here), then blended fresh with green chillies, ginger, and garlic into a silky puree.
The puree is tempered with cumin, garam masala, and a finishing splash of cream — just enough to enrich without muting the spinach. Cubes of soft, hand-pressed paneer are folded in last so they stay tender and absorb the gravy without breaking apart.
Most restaurants make Palak Paneer in advance and reheat it — which dulls the colour and deadens the flavour. At Rawaayt, the spinach is blanched and pureed daily, and the dish is finished to order. That's why our Palak Paneer arrives bright green, fresh-tasting, and full of life.
Garlic naan is the classic match — perfect for scooping up every drop of gravy. Jeera rice works beautifully too. For a fully vegetarian feast, add Kadhai Paneer as a contrast in texture and spice level.
