Raj Kachori translates to "king of kachoris" — and one bite makes it obvious why. Our shells are made fresh in-house from semolina, fried to a perfect crisp puff, then carefully cracked open and filled in front of you with layer after layer of textures and temperatures.
Inside you'll find boiled potatoes, soaked moong dal, beaten yogurt, sweet tamarind chutney, spicy green chutney, our house chaat masala, fresh cilantro, crunchy sev, and a final scatter of jewel-bright pomegranate seeds. Every spoonful hits sweet, sour, spicy, creamy, and crunchy all at once.
We're one of the few restaurants in Edmonton that makes the kachori shells from scratch each day rather than using imported pre-fried versions. That freshness is what keeps the shell from going soggy under all those toppings — a detail that separates a great chaat from a mediocre one.
